Ingredients
- 4 small yellow onions, sliced into rings
- 4 garlic cloves, minced
- 1 tsp light soy sauce
- 1 tsp honey
- 2 tbsp white miso
- 1 tbsp beef tallow
- 2 packs wet udon noodles
- 3 tbsp starchy noodle water
- 3 tbsp unsalted butter
- Chives, very finely sliced, for topping
- Fried onions, for topping
- White sesame seeds, for topping
Instructions
- Combine light soy sauce, honey, and white miso into a paste.
- Heat beef tallow over medium heat and stir-fry onions for 25 to 30 minutes, until caramelized.
- Cook the wet udon in boiling water. Reserve 3 tablespoons starchy noodle water and mix it into the miso paste to make a sauce.
- Melt butter into the caramelized onions and add minced garlic.
- Add the miso sauce, then toss in the cooked udon until evenly coated.
- Serve topped with chives, sesame seeds, fried onions, and chili oil if desired.
