Ingredients
For the Miso Curry Broth
- 2 tbsp olive oil
- 6 cloves garlic, minced
- 2 tsp ginger, minced
- 1 tbsp lemongrass
- 2 tbsp red curry paste
- 1 tbsp miso paste
- 1 can (400 ml) coconut milk
- 200 ml unsalted beef fond
- 300 ml boiling water
- 1 tbsp fish sauce
- 1 tbsp sriracha
- 1/2 tsp sugar
- 4 kaffir lime leaves
- 2 packs wet udon noodles
For the Pork Topping
- 300 g pork mince
- 1 tbsp olive oil
- 3 cloves garlic, minced
- 1 shallot, minced
- 2 tsp ginger, minced
- 1 tsp soy sauce
- 1 tsp dark soy sauce
- 1/2 tbsp fish sauce
- 1/2 tsp sugar
Toppings
- Soft-boiled eggs (optional)
- Sliced green onions
- Sesame seeds
- Hot sauce
Instructions
- Heat olive oil in a saucepan and sauté the garlic, ginger, and lemongrass for 1 to 2 minutes.
- Stir in the curry paste and miso paste and cook for 1 minute.
- Add the coconut milk, beef fond, boiling water, fish sauce, sriracha, sugar, and kaffir lime leaves. Simmer for 5 minutes.
- Brown the pork mince in olive oil in a skillet.
- Add the garlic, shallot, and ginger. Stir in the soy sauce, dark soy sauce, fish sauce, and sugar. Cook until lightly caramelized.
- Soft-boil the eggs and cook the udon noodles according to package directions.
- Divide the noodles between bowls. Add the broth and top with pork mince, eggs, green onions, sesame seeds, and hot sauce.
