- 2 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 6 tbsp all-purpose flour
- 2 large eggs
- 1 to 2 cups panko breadcrumbs
- A lot of coconut oil, or beef tallow, for frying
- 1/2 Shredded green or iceberg cabbage
- 1 cup basmati rice
- Tonkatsu sauce
- Sesame seeds, optional
Instructions
- Chop the cabbage and set aside.
- Butterfly and pound chicken breasts until thin and even. Season both sides with salt and pepper.
- Set up three bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs.
- Coat chicken in flour, dip in egg, then press into panko.
- Heat coconut oil over medium heat to around 340°F (170°C).
- Deep-fry chicken for 3 to 6 minutes, until golden and crispy.
- Meanwhile, cook rice according to package instructions.
- Take the chicken out of the oil and slice chicken into strips.
- Serve over cooked rice with cabbage, tonkatsu sauce, and sesame seeds if using.
